Stunting questions

Allright, I've watched quite a few stund vids already and I have some questions..

First of all, how do u guys stunt in Liberty City using VC bikes and vehicles?

Secondly, I've seen you guys crash into something and then fall off the bike but then sitting on the bike again while in air. How do u do that?

Third - How do u land and grind the rails? Do I just need to land on it or are there some other tricks?
